Fresh tomato based pasta

Being lazy is not a bad thing, as I discovered not long ago. Being lazy is the reason I came up with this fresh tasting recipe.
I was so hungry one evening after a long and lazy day. As usual pasta and fresh tomatoes are abundant at my home(thank you relatives and frequent guests from Rome,Italy). I was so tired to cook up the sauce, that I just chopped the tomatoes and fresh basil, and that was the base for the pasta.



The recipe:
  • Per 1 serving of pasta you will need 1 mid sized tomato (100-150 g ~ 5 oz )
  • Several leaves of fresh basil
  • Extra virgin olive oil
  • Parmigiano Reggiano or Grana Padano or any other grana type hard cheese NOT GRATED
  • Optioanly: Crushed cilantro seeds and 1 small celery leaf
  • And salt to taste
Cook you favorite pasta and meanwhile prepare the base.

Chop fresh tomatoes into cubes or any way you like it. (With seeds or seedless)
Mix the tomatoes with extra virgin olive oil
Optionally:
If you add cilantro and celery leaf, my preference is to mix chopped celery leaf whole cilantro seeds and large grain salt.
Crush and mix everything using in mortar.
Gently stir into the tomatoes
Voila! The base is ready.

Next spread the base evenly on a plate, the size depends on the amount of pasta you prepare.
Place the hot pasta on the base, do not mix with the base.
Slice the cheese with a knife, to produce thin leaves of cheese.(You may use grated, if you wish)
The result would be same as in a salad, as seen here: http://www.parmigiano.it/images/insalata.jpg.
You may drizzle with more olive oil to you liking.

And that is it...

The person who is eating the dish, is the one who may or may not want to mix the base with pasta.
