Tagliatelle with blue cheese

The simple rustic dish from the Italian classics. Fresh tagliatelle bring the earthy taste with the best falvours of wheat. Most important part of the preparation of the dish is to make sure that the wheat flavours are not dominated by the sauce.

Ingredients:
  • Fresh tagliatelle pasta ()
  • Blue cheese (1oz/30g per serving)
  • Celery
  • Basil
  • Galic clove
  • Olive oil
Both sauce and pasta should be cooked simultaneously. 
Cook the pasta as required. Fresh pasta - 4 minutes; dried pasta - 10-12 minutes.

Sauce:
  1. Begin with heating the saucepan and add olive oil
  2. Crush the garlic and finely chop the celery, fry them in the saucepan.
  3. Mince the cheese and add it into the saucepan
  4. Mix the ingredients
  5. Add some water from the pasta to thin out the sauce a bit
  6. Add the basil (dried or fresh)
  7. Remove the saucepan from heat (if pasta is not ready to be added)
When the pasta is ready add it to the hot saucepan and mix the pasta with the sauce. Reheat the sauce if removed from heat.
