Sweet marinated Chicken

A dish for people with some time to spare and a grill. Unusual ingredients yield some unusual flavors and will surprise some people.




Ingredients:
  • Chicken fillet
  • Red rice
  • Palm sugar - 4 tblsp
  • Red wine vinegar - 1/2 cup
  • Basil (tsp)
  • Green peppercorns (tsp)
  • Rosemary (tsp)
  • Ginger (fresh)

Marinade:
  1. Dissolve the palm sugar in a cup of hot water
  2. Add a teaspoon finely shopped rosemary, a tablespoon of ground green pepper and basil
  3. Mix everything
Add the chicken fillet into the marinade and leave for one hour.
At the same time soak the rice for one hour.

Rice:
  • Cook the rice until ready with a piece of ginger for additional flavor.
Grilling chicken:
  1. Take out the fillet(s) out of the marinade and reduce the marinade to a thick sauce in a saucepan.
  2. Dip the fillet(s) into the sauce and caramelize the outer coating with a blowtorch.
  3. Place the grill and cook till prepared.

Serve on a bed of rice and enjoy the interesting taste that the red wine vinegar brings to a usually white wine dish...
