Ingredients:
- Chicken fillet
- Red rice
- Palm sugar - 4 tblsp
- Red wine vinegar - 1/2 cup
- Basil (tsp)
- Green peppercorns (tsp)
- Rosemary (tsp)
- Ginger (fresh)
Marinade:
- Dissolve the palm sugar in a cup of hot water
- Add a teaspoon finely shopped rosemary, a tablespoon of ground green pepper and basil
- Mix everything
At the same time soak the rice for one hour.
Rice:
- Cook the rice until ready with a piece of ginger for additional flavor.
- Take out the fillet(s) out of the marinade and reduce the marinade to a thick sauce in a saucepan.
- Dip the fillet(s) into the sauce and caramelize the outer coating with a blowtorch.
- Place the grill and cook till prepared.
Serve on a bed of rice and enjoy the interesting taste that the red wine vinegar brings to a usually white wine dish...
