What did I do to get that taste? Simply by trying to have boiled turkey and stock.
Here's the recipe:
- Get a turkey fillet (min 500 g or 1 1/4 pound)
- Place it into cold water and bring to a gentle boiling. Remove the
- Add a bit of salt (half a table spoon)
- Close the lid and reduce the heat to have the water gently boiling under the lid.
- Add a bit of celery leaves. Leave for 5 minutes covered.
- Add half of a bay leaf, some rosemary, oregano and one thyme branch (follow the sequence, with 2 minutes between introducing these herbs)
- Add an onion
- Cover and leave for one and a half hours
- Add a few coriander seeds and a few black or white peppercorns
- Cover and leave for half an hour
- Turn off the heat and leave to cool a bit
